Hi there, fellow empty nesters! If you're like me, you might be feeling a whirlwind of emotions as you adjust to cooking for just two after years of bustling family dinners. It's a whole new ballgame, isn't it? But fear not, because I'm here to walk you through this culinary transition and help you embrace this exciting chapter in your life.

So, how do empty nesters cook for two after the kids move out?

First things first, let's talk emotions. It's completely normal to feel a mix of sadness and excitement as your adult children spread their wings and embark on their own adventures. Cooking for fewer people might feel like a big change, but it’s all part of the journey. It's an opportunity to explore some new culinary skills and discover a possible joy for experimenting in the kitchen. Now that you are transitioning into life after kids and only cooking for two you actually have more options available to you.

So, let’s move onto the practical stuff. Here are some tips and strategies to make the transition to cooking for two a new adventure:

1. Plan Ahead

Take some time each week to plan your meals. This not only saves you time and stress but also helps you make healthier choices. Plus, it gives you something to look forward to as you experiment with new recipes and ingredients. We found that after our girls moved out, we needed to separate food before freezing it as we no longer needed the amount that it’s packaged in.

2. Scale Down Recipes

Many recipes are designed to feed a crowd, but don't let that intimidate you. Get comfortable with scaling down recipes to fit your new household size. Invest in a kitchen scale to accurately measure ingredients and avoid waste. When our girls left, if we ever did over cooked, we would serve them a potion and freeze it until we saw them next. They always appreciated some home-cooked dinners. Still do.

3. Embrace Leftovers

Leftovers are your best friend when cooking for two. Embrace them! Cook larger batches of your favourite dishes and enjoy the convenience of leftovers for lunch or dinner the next day. Just make sure to store them properly to maintain freshness. An option is to cook part of the dish and save it to make an alternative. I.e. Cook a batch of mince and use it in varies dishes.

4. Get Creative with Ingredients

Now that you're cooking for fewer people, you have the freedom to experiment with new ingredients and flavours. Visit your local farmers' market or specialty grocery store and explore seasonal produce and artisanal products. You might discover some new favourites along the way. 5. Prioritise Health and Wellness

As empty nesters, it's important to prioritise your health and wellness. Focus on cooking nutritious meals that nourish your body and soul. Incorporate plenty of fruits, vegetables, whole grains, and lean proteins into your diet, and don't forget to stay hydrated. 6. Make it a Date Night

Turn mealtime into a special occasion by making it a date night with your partner. Set the table, light some candles, and savour each bite together.
